New Baxter Hybrid Convection Oven Combines Convenience of Convection with the Versatility of Steam into One Small Footprint
Baxter Bakery’s new hybrid convection oven combines the best features of their rotating rack oven and a traditional convection oven in a small footprint. The advanced airflow system makes it effortless to evenly bake a wide variety of items, including casseroles, breads and signature dishes, all with the benefit of convection steam. Additionally, the oven’s single-load door is graced with a large viewing window reminiscent of a hearth oven that is ideal for front of house exhibition baking and cooking that enables customers to watch items created from scratch.
The hybrid convection oven does not rotate the product. The patent-pending airflow system in the oven provides consistent, quality cooking results from top to bottom and front to back without ever rotating a pan, a feature only available on Baxter’s hybrid convection oven.

Additionally, the Baxter hybrid convection oven includes Baxter’s patented, cast iron, steam system. Water is dispensed from a single large opening then interacts with the heated cast iron spheres creating steam, ideal for a thick, golden crust or that special meat product. The hybrid convection oven is made from stainless steel construction with a heavy-duty welded frame for ultimate durability. Designed to accommodate standard 18” x 26” sheet pans, the bake chamber can easily be accessed using the new latch and handle design.
The Baxter hybrid convection oven has the ability to handle complex recipes. Using easy to read digital controls, up to four different steps within a recipe can be easily programmed, ensuring the highest quality results are produced. And those results can be repeated since the oven will store up to 99 recipes for easy access.
