Kitchen layout considerations.

The physical design of your kitchen may seem like it’s exclusively a workflow consideration, but it can also significantly impact both your sustainability efforts and your utility costs. Refrigeration equipment, for example, usually comes with a manufacturer’s recommendation of the space required for optimum performance. It may seem like a space-saving idea to pack machines closely together, but you may be paying more than you know to cram that space, in food losses, reduced efficiency and, by result, higher utility bills.

Likewise, cooking equipment that produces a great deal of heat can make your refrigeration and ventilation systems work harder—and make your employees uncomfortable. Equipment should be properly positioned, vented and shielded. Your manufacturer will also recommend the optimum operating envelope for any equipment that uses electronic controls.
